It is a small perennial sub- shrub, with much branched stems, woody at the base. Leaves are evergreen, opposite, very small at 4 - 8mm long and linear to elliptic. Leaves are almost stalk less with margins curved inwards and with a strong scent of thyme. 
Thyme is often used to flavor meats, soups and stews. It is also widely used in Caribbean cuisine. In Jordan the condiment zahtar contains thyme as vital ingredient.
Thyme should be added early in cooking so that its oils have time to be released.
